Electric Tilt Braising Pan. The 38-gallon Firex electric tilt braising pan (UDBRE038AV1) has a capacity of 38 gallons. The UDBRE038AV1 braising pan has an electric power rating of 16.50 kW in the 208 V, 3-phase, 60 Hz electrical configuration. The Firex electric tilt braising pan has a 7-inch touch screen. The pan supports selection of 7 different cooking modes, cooking type and time setting, cooking in “Manual” mode or “Program” mode, and creation and editing of multiphase cooking programs with settings for each phase. The cooking vessel is stainless steel AISI 304, with bottom thickness 15 mm and wall thickness 2.5 mm, rounded corner angles and an anti-overflowing lip. The vessel has electric tilting on the front part. The pan has a self-supporting frame in stainless steel AISI 304 (thickness 30-40/10). Its outer cover is stainless steel AISI 304 with a fine satin finish (thickness 12-15/10). The pan provides pressure cooking with an automatic system for eliminating air from the cooking container (for cooking with saturated steam) and automatic steam condensation after cooking to allow fast and safe lid opening without steam dispersion in the room.
