Electric Tilt Braising Pan. The UCBTE024CV1 electric tilt braising pan has a capacity of 24 gallons. The FIREX UCBTE024CV1 electrical configuration is rated 220–240 V at 60 Hz. The FIREX UCBTE024CV1 current is 39.0 A in the 220–240 V, 3-phase, 60 Hz configuration. The UCBTE024CV1 braising pan's control has a 7-inch touch screen. The control panel provides five cooking modes, manual and program modes, cooking-type and time settings, and creation and editing of multiphase cooking programs with cooking parameters, mixer settings, heating-wall settings, and text messages. The cooking vessel is AISI 304 stainless steel, with a 12 mm bottom and 3 mm wall thickness. The automatic mixing device has three arms and PTFE scrapers, including a vertical blade for scraping walls; it is entirely removable for cleaning and adjustable from the control panel according to the product being processed. The lid supplied with the UCBTE024CV1 braising pan is insulated. The control panel permits cooking with the basin tilted up to 15°, mixer operation at minimum speed during tank tilting, and tank tilting and return by touch screen or keyboard.
