The gas convection steamer is model GCX-10S-6-10. Each compartment of the GCX-10S models holds 2 pans at 6-inch pan depth. Each compartment of the GCX-10S models holds 10 pans at 1-inch pan depth. Each compartment of the GCX-10S models holds 3 pans at 4-inch pan depth. Each compartment of the GCX-10S models holds 5 pans at 2-1/2-inch pan depth. The gas-heated steam boiler is offered for Natural Gas operation. The GCX-10S-6-10 steamer has a 250,000 BTU boiler. The gas convection steamer natural-gas water-column pressure specification is 7–14 in [178–355 mm]. The gas-heated steam boiler operates at 9–11 psi (62–76 kPa). Each cooking chamber is described as all-welded type 316 stainless steel, fully insulated, and provided with removable stainless-steel pan supports. The unit comes standard with a water treatment system, split water line, CSD-1 boiler controls, electronic ignition, and automatic blowdown. The steamer compartments have a 60-minute mechanical timer in each compartment.
