Convection Steamer. ECX-24-SB. The ECX-24-SB convection steamer is a 24-pan model. The ECX-24-SB convection steamer has two cooking compartments. Each ECX-24-SB steamer compartment holds 4 pans at 4-inch depth in the listed 4-inch-and-1-inch pan-depth format. Each ECX-24-SB steamer compartment holds 12 pans at 1-inch depth in the listed 4-inch-and-1-inch pan-depth format. The standard 42 kW, 3-phase ECX-24-SB steamer draws 116.6 A at 208 V. The ECX-24-SB electric steam boiler's listed 208 VAC operating configuration has a frequency of 60 Hz. The steamer is constructed of satin-finish type 304 stainless steel, with a one-piece, all-welded type 316 stainless-steel cooking chamber. The ECX-24-SB convection steamer independently controls timing for each cooking compartment. The timer controlling each cooking compartment's timing on the ECX-24-SB convection steamer has a duration of 60 minutes. The convection steamer is mounted on a cabinet base with a full-perimeter angle frame, reinforced counter, and boiler mountings; the base has an electric boiler with controls, an all-stainless-steel exterior, hinged doors, and 6-inch stainless-steel legs with four adjustable flanged feet for securing to the floor.
