The Southbend KEPS-F steam kettle uses electric power. KEPS-40F. The KEPS-40F kettle has a capacity of 40 gallons (152 liters). 18KW, 240V, 1PH. The steam jacket of the Southbend Steam KEPS-20F, KEPS-30F, KEPS-40F, and KEPS-60F kettle surrounds the full kettle. Construction is all-welded #4-finish type 304 stainless steel. The interior liner is standard with 316 stainless steel for high-acid-content cooking. The controls include a power switch, thermostat, pilot light, low-water light, vacuum/pressure gauge, safety relief valve, and low-water shutoff. The kettle's convenience features include a 2-inch (50 mm) draw-off valve.
