The ZEPHAIRE-200-G-ES operation uses a direct-fired gas system. The ZEPHAIRE-200-G-ES extra-depth baking compartment accepts five standard full-size 18 in × 26 in baking pans. The ZEPHAIRE-200-G-ES standard temperature control range is 200°F (93°C) to 500°F (260°C). controls: ssi-m solid state infinite control with separate dials for thermostat and timer. The Zephaire-200-G-ES has a maximum gas input of 50,000 BTU/hr (14.6 kW) per oven section. The Zephaire-200-G-ES is specified for natural gas with inlet pressure of 7.0 in. W.C. minimum to 10.5 in. W.C. maximum. The 115 VAC Zephaire-200-G-ES power-supply configuration is rated 8 A. The 115 VAC Zephaire-200-G-ES power-supply configuration is single phase. The oven has a stainless steel front, top, and sides. The interior has a full angle-iron frame, a double-sided porcelainized baking-compartment liner (16 gauge), and a stainless steel combustion chamber. The baking chamber distributes air by a single inlet blower wheel powered by a two-speed, 3/4 HP motor with thermal overload protection.
