The Southbend compartment cooker operates on direct steam. The DC (P, L or W) -2S model family has 2 compartments. The cooker is constructed of all-welded type 304 #4 finished stainless steel. The equipment's incoming steam pressure is specified as 15–45 PSI (103–310 kPa). The direct steam compartment cooker's maximum compartment operating pressure is 6 psi (41 kPa). The direct steam supply to the compartment cooker must provide a flow of 150 lbs (68 kg) per hour. Each cooking compartment is standard with universal pan supports. Each compartment is independently controlled by an automatic timer control with visible and audible signals. At the end of the cooking cycle, the controls automatically shut off and exhaust the incoming steam, drain condensate from the compartment, and sound a continuous signal until turned off manually. The cooker controls are equipped for single-phase operation. The cooker controls are equipped for operation on 115 VAC. The equipment draws 2 amps per compartment.
