GCX-2S … a convection steamer on a modular, gas-fired steam-boiler base, with a stainless-steel type 304 exterior and #4 finish. btu-per-hour: 200,000 btu/hr. The GCX-2S and GCX-10S models use natural gas at a water-column pressure of 7–14 in [178–355 mm]. Each compartment of the GCX-2S-[36] steamer holds 1 pan with 6 in pan depth. Each compartment of the GCX-2S-[36] steamer holds 2 pans with 4 in pan depth. Each compartment of the GCX-2S-[36] steamer holds 6 pans with 1 in pan depth. Standard features listed are a water treatment system, CSD-1 boiler controls, electronic ignition, automatic blowdown, split water line, and a drain tempering system for a 140-degree temperature requirement; the drain tempering system requires a 1/2-inch cold-water connection. The control housing is accessible through a fully removable side panel. Each compartment includes a 60-minute mechanical timer with a ready pilot, cooking pilot light, and audible signal that sounds at the end of the cooking cycle. The cooking chambers are all-welded type 316 stainless steel, fully insulated, and provided with removable stainless-steel pan supports. The GCX steamer electrical supply is single-phase (1PH). The GCX steamer draws 2 amps per compartment, or as specified on the data plate.
