The Southbend KECTC kettle is a counter kettle. The KECTC-6 has a rated capacity of 6 gallons (23 liters). The KECTC-6 has rated electrical input of 7.5 kW. The kettle has a double-wall interior forming a steam jacket around the lower 2/3 of the kettle; the jacket enclosure contains factory-sealed distilled water. The Southbend KECTC kettle operates electrically. The KECTC-6 three-phase version draws 20.8 A per line at 208 V. The Southbend KECTC kettle's temperature range has an upper setting of 285°F (140°C). The Southbend KECTC kettle's temperature range has a lower setting of 165°F (74°C). The controls are water-resistant and integrally mounted, and include a power switch, solid state thermostat, pilot light, vacuum/pressure gauge, safety valve, and low-water shut-off with low-water light. Construction is all-welded #4-finish type 304 stainless steel. The Southbend KECTC kettle has a type 316 stainless steel interior cooking surface.
