CTBHA utilizes hydro assist. CTBRHA follows the same specifications as CTBHA, only with door opening on the right side and controls on the left side. The CTBHA/CTBRHA oven has a SimpleTouch capacitive touchscreen control interface. The oven offers Manual Mode, Recipe Cooking, and Rack Timing; convection-only mode for baking and pastries; and HydroAssist Mode, which provides humidity. The CTBHA/CTBRHA standard-depth baking compartment accepts standard half-size baking pans measuring 13 × 18 in. Each CTBHA/CTBRHA oven compartment has nine rack positions. The oven has a full angle-iron frame, stainless steel front, top, sides, and vent, and solid mineral fiber insulation around the cooking chamber. The CTBHA/CTBRHA oven draws 24/12/15 A on L1-L2-L3 at 208 V, 3 phase. Each CTBHA/CTBRHA oven compartment can be set to a maximum temperature of 500°F.
