The Southbend SCX-2S and SCX-10S convection steamers have two compartments. The SCX-10S-6 steamer has two 6-gallon kettles. The SCX-10S-6 with two 6-gallon kettles has a 10-pan compartment capacity for 1-inch-deep pans. The SCX-10S-6 with two 6-gallon kettles has a 5-pan compartment capacity for 2-1/2-inch-deep pans. The SCX-10S-6 with two 6-gallon kettles has a 3-pan compartment capacity for 4-inch-deep pans. The SCX-10S-6 with two 6-gallon kettles has a 2-pan compartment capacity for 6-inch-deep pans. fuel type: steam. The boiler is equipped for incoming steam pressure of 25–45 psi (170–310 kPa). The steam-coil-heated steam boiler operates at 9–11 psi (62–76 kPa). The steamers shown draw 2 amps per compartment, or as specified on the data plate. The boiler controls include safety high-limit pressure control. The steamer shall be constructed of satin finish stainless steel, type 304, with a cooking chamber of one-piece, all-welded, type 316 stainless steel.
