The CTBHA/CTBRHA half-size convection oven uses electric heat. Each CTBHA/CTBRHA oven compartment accepts standard half-size bake pans measuring 13 in. × 18 in. The CTBHA/CTBRHA standard-depth baking compartment accepts the pans in a front-to-back position. Each oven section has nine rack positions. The CTBHA/CTBRHA oven has a SimpleTouch capacitive touchscreen control interface. The oven offers Manual Mode, Recipe Cooking, and Rack Timing; convection-only mode for baking and pastries; and HydroAssist Mode, which provides humidity. The oven has programmable water injection with 10 moisture levels and records HACCP data and a fault log for easier troubleshooting if needed. The oven has a full angle-iron frame, stainless steel front, top, sides, and vent, and solid mineral fiber insulation around the cooking chamber. max temp f: 500. min temp f: 200. The CTBHA/CTBRHA oven requires 2 in. (51 mm) clearance at the back. The Blodgett CTBHA/CTBRHA oven has a minimum side clearance of 0 in. (0 mm) from combustible and non-combustible construction.
