ECX-10S-36 … models are convection steamers. The electric steam boiler operates at 9–11 psi (62–76 kPa). A steamer with a 42-kW boiler draws 110.2 amps per line at 220 V, 3 phase. Standard features include a water treatment system, split water line, CSD-1 boiler controls, automatic blowdown and a drain tempering system for the 140 degree temperature requirement (requires 1/2” cold water connection). The steamer shall be constructed of #4 finish stainless steel type 304, with a cooking chamber of one-piece, all welded, 316 stainless steel. Each steamer compartment's timer has a 60-minute duration. Each steamer compartment's timer is mechanical.
