Electric Tilt Braising Pan. The UCBTE018CV1 electric tilt braising pan has an 18-gallon capacity. The cooking vessel is stainless steel AISI 304, with a 10 mm bottom and 2 mm walls. The braising pan has a self-supporting structure in AISI 304 stainless steel, thickness 30/10. The UCBTE018CV1 electric tilt braising pan's tank-wall band heaters are controlled by an electronic control panel. The braising pan has wall-temperature settings from 122°F to 266°F. The panel board functions include an ON/OFF switch, keys to turn the mixer on or off and move the basin, selection of five different cooking modes, cooking with the tilted basin up to 15°, cooking type and time setting, and cooking in Manual or Program mode. The control panel supports creating and editing multiphase cooking programs, setting each phase's cooking type, temperature and time parameters, mixer settings, and text messages. The safety system includes an emergency button, blocking of heating for excess temperature with a manual resettable safety thermostat, and heating interruption during vat tilting. 3-phase 208 V, 60 Hz electrical configuration. 11.00 kW electric power in the 3-phase 208 V, 60 Hz configuration. 30.6 A in the 3-phase 208 V, 60 Hz configuration.
