The Southbend electric steam “Do-All” cooker with cabinet base is offered as model EDA-2S. The EDA-2S steamer has a capacity of 8–16 pans. The EDA-2S steamer has 2 compartments. The EDA-2S steamer uses 3-phase electrical power at 208 V. The EDA-2S steamer has an electrical rating of 42 kW at 208 V. The lower compartment of the Southbend Steam model EDA-2S … operates as a pressure cooker only. The operator can select the upper compartment of the Southbend Steam model EDA-2S … to operate either as a pressureless free-venting cooker or as a pressure cooker. The maximum operating pressure of the lower compartment of the Southbend Steam model EDA-2S or EDA-3S cooker is 6 psi (41 kPa). When operating as a pressure cooker, the upper compartment of the Southbend Steam model EDA-2S or EDA-3S cooker has a maximum operating pressure of 6 psi (41 kPa). The cooker shall be constructed of all-welded satin finish stainless steel, type 304. The doors shall have a removable inner liner of aluminum plate with full perimeter gasket seal, an outer liner of one-piece all-welded stainless steel, and a wheel-and-screw closing mechanism. Each compartment of the Southbend cooker has independent automatic timer controls.
