Southbend direct-steam kettle models have a 2/3 kettle-body steam jacket. The DMT models require incoming steam pressure from 5 to 30 psi (34 to 207 kPa). Southbend DMT models are equipped for operation on 115 VAC, 1 phase, 60 Hz. DMT models have a 1/2 H.P. hydraulic system for tilting, allowing complete emptying of contents; tilting may be stopped at any time without the kettle tilting back. Southbend DMS and DMT kettle models include a cover as standard construction. The cover for Southbend DMS and DMT kettle models has a spring-assist design. The stainless-steel exterior has a #4 finish, with removable side panels and doors with magnetic latches.
